Congrats on the find! I did the same when I "found" my 91 GT. Replace all fluids and belts, TB/WP, AC refresh, electrical clean up, etc. I also was concerned about the antifreeze, and used litmus strips to check. Luckily, mine had been stored with 100% antifreeze, no water so no issues with the block/head gaskets. Drained and filled with correct antifreeze/water combo. 4 years later and 16K miles and no issues.

You will love the GT when it's finally sorted!

And it can be disabled by jumping the correct connections in the CE panel (don't know exactly, but a search should find it).

Also, you can simply turn the alarm on and off by manipulating the alarm switch at the back of the door/hatch lock cylinders. It requires getting to the back of the lock cylinder, but once you do, you can arm and disable the alarm.

Kind of what I was hoping... that there is a way to trick the alarm from within the door or even better from the panel. Been eyeballing a complete set of door, glove, ignition, hatch, and gas cap on ebay for the worst case, but I'm going to go down a couple of other avenues first. It would be nice to maintain the factory keying just in case this lost key scenario should ever occur again in the car's life-time.
