Please help me. I need some guru advice. Question, how much room should I have between the oil pan and the crossmember with new motor mounts? Any advice is appreciated.

Also depends on mounts I have used solid XJ12 jaguar (excellent insulation. no vibration, last longer than the car they were designed for) have around 12mm sump to cross member clearance.
With Toyota type ,bigger and silicone filled I'd allow a bit more room, they can get squishy in time.
3UZ rear sump/pan.

Anyway keep up the good work and we all can't wait to see what you do next
P.S Porsche built a V twin for Harley Davidson and a turbo 4 for an Audi station wagon.

Porsche didn't build the V-Rod engine. They made it work for a production bike. It was a Hqtley race engine that neede to be adopted into street use and Porsche did that part.
However, the Ford Contour/Mercury Mystique V6s were developed for the Boxter. Porsche sold it to Ford because they decided to test the new watercooled flat 6 in the Boxter instead.

Don't forget the 32V Corvette - designed by Lotus and built by a boat engine company.
Considering how **** the Vette crowed is, that didn't phase them one bit.
