Back hatch switch/motor doesn’t actuate unless hatch is already open!

It shouldn't start to run with the door closed. Do your interior lights work properly with the doors opening - I'm guessing they don't? If not - that is why your hatch works oddly...
The door has nothing to do with the hatch actually opening or not... it only controls the motor initiating running. But it sounds like it isn't working right anyway - Probably: the hatch motor needs adjustment, the interior lights need fixing and the 1A fuse needs to be replaced.

The center position is off, both end switch positions everwhere is always on...so I gotta thing to fix somewhere...

Disconnect the battery remove the three lamps from the roof and rear hatch and post a picture of them without moving the wires Note it’s best to swap in the VW lamps with pigtails to replace the front roof an hatch roof lamps if you have a dark colored car the sun will assist in melting the VDO lamps
PO might have screwed up the wire connections on the lamps
Note the hatch roof and rear hatch lamps will have different color wires than the one at the mirror the door lamps should also be inspected as well as the rear door warning lamps

Can you please expand on that a bit?
It only initiates it running?
I'm guessing that there is a 'track' on the hatch motor, somewhat similar to the 'park' on the wiper motor.
Is the part tied to the interior lights just the beginning part, and once it has moved a certain amount, the 'constant power' part takes over so it will run until it reaches the 'stop' point?
So, in theory, you could pop open the door just long enough to start the motor moving, then close the door and the hatch motor would run the full circle?
Is this anywhere close to how it works?
Or am I waaaay out in the boonies?

If you hold the switch up with the door open you can keep it running forever - but when you let go it will run until it gets to the park position. The 1A fuse only controls the parking system. The initiation system is fused off the interior lights.

The hatch not always opening is likely to be a mechanical issues with the opener - easiest start is adjust the motor position up & down on the center tool area support (loosen the 2 bolts) you want a position where the cam extends more into the hatch receiver - but not so much that the motor binds up. There is also the Zip tie trick if that doesn't help (search for that).
Finally if it doesn't park - sounds like the 1A fuse is blown. When parking doesn't work, you need to hold the switch up longer but it may also stop in a location where you cannot re-latch the hatch. So important to have this running.
The other alternative is to replace the whole thing with the VW hatch release. I got tired of mine routinely needing work every year or so and made the swap - no regrets the VW is a better solution in every way IMO, but it takes some fabrication work to adapt it.

That is indeed how it works. There are 2 circuits: the initiation circuit only works when the switch is pulled with the door open, once the motor starts moving however the park system runs it until the park position (indeed there is a track with a gap for parking).
If you hold the switch up with the door open you can keep it running forever - but when you let go it will run until it gets to the park position. The 1A fuse only controls the parking system. The initiation system is fused off the interior lights.

Door open, switch closed circuit (zero resistance).
Remember, on the door lights, the red is constant hot, the brown is constant ground, the brown/white stripe is switched ground (door switch).
