Default Audi 2.5 or Jetta VR6 2.8L MAF conversion?

Would these be closer to ours for an AFM/MAF conversion?

If you are going to do a MAF the correct way then any MAF will work.

+1, MAF ain't just a tube -- what you need is a circuit that takes care of the burn-off cycle ; it won't happen with 944 DME (with 968 DME it works). Then you need to feed exactly correct values to the DME from MAF - read:many hours in a dyno.

I was considering that for my S2 but the 2 became 3 as the engine got changed...

Just a note - the newer hotwire MAFs do not need a burn-off cycle, at least they don't need the DME to do it.

I was just throwing that idea out there since they are a european design vs. Ford contour.

On a 951, a must have for high power, IMO.
