Default Thermostat question

Should I notice a dip on the temperature needle when the external thermostat opens-up? I remember well how that always happened on my 964's after 15 minutes of driving. With the 3.2 the needle goes to the first line (90°C) and stays there, even on circuit and 20°C outside temperature and I mostly drive in a spirited way.
When I had the car apart I cleaned out the thermostat completely but I failed to replace the internals. One of the lines to the cooler, which was also reconditioned feels hot but the other one less so.

I've never noticed such a dip....of course I've got my front cooler fan hardwired to always be on.....and by the time the engine is warm I've long forgotten about engine temp and am focusing on how fun the car is to drive. My biggest worry is sitting at idle too long in traffic....
