how much info is included in the VINS for a 72 targa and a 63 356? I'm starting to restore them and want to get as close to original as possible

Take a look at porsche356registry.org if you haven't already. You can get the certificate of authenticity from Porsche and color/fabric data from Reutters. A quick search of the main forum will answer in detail

The Porsche supplied COA's will no longer list engine and transmission serial numbers unless you can provide them first- circular reasoning at it's best, they might provide some useful data on options but it's pretty hit or miss. Getting your hands on the build sheet (Kardex) is the way to go if you can get someone to provide one. The VIN number will identify what model 911 you have but that's about it.

A VIN decoder (check online) will identify the general model, year of production, plant of manufacture, and sometimes the engine type. A Kardex is not a build sheet, but (auf Deutsch) it will state the original color code and options the car came with, as well as the engine number and sometimes other things; a few folks on the 356 and Early Esses sites can provide the Kardex for a fee. Current-issue COAs aren't very helpful, unfortunately, and I believe are derived from the Kardex in any case. I have never before heard that Reutter Carosserie-Werke will provide information; does Reutter even still exist as such?

I dug up the Reutter certificate contact info:
contact info@erlkoenig-classic.de and you'll get a multi-paragraph email back which describes an elaborate "Certificate", saying the price is about $230 (not including VAT but including shipping worldwide). Guido Eickholz states delivery, quote:
As we already received quite a lot orders from Porsche 356 owners all over the world and our accurate research for the certificate takes it´s time, we´ll thank you for your patience that from date of ordering to secured shipping of the certificate it will take at least two weeks.
The certificate is available in german language and in english, please let us know what you prefer.
