Safest option: 40 mm front/rear tire width difference or -3.4% diameter change?
I'm looking to downsize to 19" wheels and would like to fit wider tires (so long as they're not taller than stock) while I'm at it. It looks like a width of 255 mm is the maximum recommended for 8.5x19 wheels, so that leaves me with either 285/35 or 295/35 rears. The 285s would result in a total diameter change of -3.4%, while the 295s would be an additional 10 mm over stock front/rear width difference. Which would be the better choice for handling/safety? I would think the 295s would be a better choice-- the steering change should be negligible, no?

I run 19x8.5 w/255/35r19 and 19x10.5 w/285/35r19 on my 718. The overall diameter is slightly smaller (about 1/2 inch), but the ratio front to rear matches stock. I don't believe the 718 is too sensitive to different staggered setups. I've seen people run up to 265/35r19 front and 305/30r19 rear just fine.
