Default 987 Cayman R vs. 981 Cayman S?

I think I prefer the cayman R, the 981, like the 991, has too much Audi interior and the car feels slightly bloated by comparison. Thoughts?

also, has the number of Cayman R's produced ever been settled?

The number 1421 has been published as the World Wide number of total Cayman R's built for sale. That number has yet to be confirmed. As you stated 563 is the confirmed number for the USA and 61 for Canada. I have established a World Wide Registry to better determine the serial number range, mix of colors produced, manual vs PDK, those with carbon fiber bucket seats, whether manufactured in Finland or Germany, and current location.
The registry can be found under the Cayman R World Wide Registry on this site, Pelican, Planet 9, PCA Cayman Registry and is also linked to Piston Heads. In the last month we have had almost 100 cars registered. Mostly US cars....but I believe Sven76 and Cman21 have registered their cars.
I am summarizing the data we have so far it is kind of interesting. I will be publishing it on those sites shortly.

I have an R, so clearly biased but I wouldn't swap mine for a 981. Spec of 987 R is close to perfection.

IMO, the 981 S is a better looking and more modern machine. And it has all the lightweight features of the R (except the seats, and i wouldn't want the lightweights. U can always change seats to ur preference) without stripping the interior like the R. The R interior looks antiquated to me. The 981 is not bloated like u say the Audi is.

For street and occasional track, I think the 981 S is better.

For strictly track use and lots of mods including engine tweaking, the R might be a better choice.

When the 981 came out, I must admit I did prefer the look of it. However, now, I even prefer the look of the 987, can't really pinpoint why.

I like the rather low rent interior of the 987 R too as it's completely fuss-free, it's a place to work, not admire and I like that "honesty". The steering on the R is light years ahead of the 981, it has a proper handbrake and is just such a sweet handling car. It's also smaller (certainly looks and feels smaller) and the engine noise is not as contrived. A few light mods would make the R a nigh on perfect car and even bone stock, it's pretty damn awesome!
