Current one is a bit squishy, and they're only $100 for a new one. Not sure if this is something that I could do myself, or something an upholstery shop should do. Porsche dealer recommended a local place, and they quoted $180. It's not a bad price, more just the hassle of getting the car there and back.

Having seen the manufacturing process many times (my company is a supplier for the OEM porsche supplier over here), I'd say it is doable as a DIY but stretching the leather correctly will be a bitch.
Try it, if it doesn't work out right, you can always bring it to the shop later.

There's an upholstery place right down the street from my office that does good work apparently...

Well it probably won't help you much since both me and wrinkledpants live in Denver CO. He knows where my office is, so it's a bit of insider knowledge, he's passed the place coming to my office......

Oh yeah, that's right. I'll give them a call. Maybe a schedule an appt with you too at the same time, since I couldn't make the last one!

$180 sounds dirt cheap.
