iPod Classic with PCM 3.1 (2014 Cayenne) - digital or analog from iPod?

Default iPod Classic with PCM 3.1 (2014 Cayenne) - digital or analog from iPod?

Does the PCM use the iPod DAC and collect analog audio from the iPod, or does it collect a digital stream and use the PCM DAC?

Anything over USB is using the data signal into the controlling device. It would have to be a proprietary 30-Pin connection for the analog audio to come through. If you have Bose or Burmester, the DAC is in the factory amplifier(Fiber optic from PCM to amp). If you have Sound Package Plus or Base Stereo the DAC is in the PCM Unit itself.
