I know one of the manuals I read said that as much as a quart every 600 miles could be considered normal.

If I'm driving it hard, I can use up to 500ml every 1000km. If it's just cruising it doesn't use anywhere near as much.

Mine does consume about 1QT every 700-1200 miles. I know it's a wide range but it's less if you drive normally and more when in boost and love spirited driving, which would be me.
I have a 13psi Supercharged Honda S2000 and it hardly consumes any oil after I started using *MOTUL 6100 Synergie+ 10W-40 as oppose to MOBIL EP 10W30. I almost never have to top it off now.
So yeah, it's a bit shocking and unusual for me to see Mezger engine consume so much. Going from Mobil to MOTUL 8100 X-cess 5W-40 didn't improve my oil consumption on the Turbo. I am too much of a wuss to try 50 weight.
*I am NOT suggesting that you use 6100 Synergie+ on your Turbo, but just telling you that my Honda stopped burning oil from it which is what that oil was designed to do. 6100 line is a blend and not a FULL true-synthetic. 8100 line of MOTUL oils are true synthetics.

My car uses a quart every 4k to 5k miles, towards the lower end when you're driving it harder, but thats it.
1qt per 1000 miles or less would have me a bit concerned (unless you're a track rat)

Yeah, it's weird. I will try to keep track of it my next oil change to get a more accurate reading on the amount and interval to see if I'm over exaggerating.

About the only thing that affects oil consumption is how I drive the car. 4K+ miles at freeway speeds (road trip) there was hardly any oil consumption. But over 5K miles (I change the oil every 5K miles) toss in a couple of spirited drives on a mountain road with lots of hard acceleration and hard braking and oil consumption goes up. It almost seems the oil level drops faster than the fuel tank level.
I believe the engine proper is not consuming the oil, that is the oil is not making it past the rings or past the valve stem seals and through the valve guides, but the bulk of the oil is consumed as vapor courtesy of the considerable oil vapor a hardworking DOHC (and turbo-charged too boot) engine makes and the AOS is unable to remove.
Another source of the oil can be the turbo seals.
There are things to worry about and things not to worry about. I don't worry about some oil consumption from my Turbo's engine.
