Dallas Area Shops for Caliper Rebuild & Refinish
It's time to get my calipers rebuild and while they're at it have them refinished them too so they look good again. I'm looking for suggestions in the Dallas area (preferable north) that can do the job turnkey and does quality work.
Also, any idea of what a reasonable charge should be for a job like this?

Well, I can't speak for anywhere in Dallas but Hayworth Racing Brakes is top notch. Very fair pricing. Will do full refurb (paint, decals, seals, pistons if needed, etc).

Thanks. I'm hoping to be able to drop the car off and pick it up when it's done. If I go the route of uninstalling and reinstalling the calipers myself I'll reach out to him.

I'd just put it on stands in the garage, pull the calipers, cap the lines with rubber caps and ship them off.
Installing/removing/bleeding brakes isn't hard... rebuilding them is a pain worth paying for in my view...

I'm comfortable pulling the calipers. Actually did the fronts this weekend to put on new rotors. It's leaving the car on jack-stands that a bit of a pain.
The car sits on a 4-post lift but I don't have the roller jack option. I'd have to somehow lower it to the ground, use my floor jack to raise the car, put stands under the car and on to the tracks. Then raise the lift with the car on the stands. I think that's the scariest part.
If I leave the GT3 on the floor and put the other car on the lift then they'll both be stranded until the work is done.
None of it is not doable, just not preferable.
