Color changes frowned upon?

Well, I suspect I would keep it forever and simply add more cars over time if I needed to (we do need to, right?) so a wrap has it's pros and cons over a full-on paint job. Or...I could just keep holding out and searching.

Your car, your choice, your opinion matters.

Car will be harder to sell but there is a buyer for EVERY car.

Do it but my advice is stay within the OEM colour pallet.

If you're going to paint it then I'd consider purchasing a car that has a 'story' because by the time you repaint yours it'll have one too. You might as well take advantage of the super-sensitive resale market that these car have. Just make sure the story isn't too big and just some straight forward damage that was repaired by a reputable shop.

Heck yes. I'd never consider anything other than OEM.

That's the thing; I don't ever want a car with "stories".

I think it'll come down to two choices; The perfect car in the color I want (which will probably take a long time still) or the perfect white car that I can hopefully put a high quality wrap on, instead of paint.

I'd consider buying a car that actually NEEDS a good paint job, getting the requisite discount, and apply those funds towards a kick *** painter.
