Do you have an OEM thermostat?
I had issues with a ford Taurus once. Replaced the thermostat with a autozone one, did not work right, replaced it with a Napa one, did not work right. Replaced it with an original one, issue solved.

doesnt mean the tstat isnt bad out of the box. by testing it in the hot water you either confirm its good or bad. otherwise your only guessing its a good unit

engine cooling circuit cools the trans...not the other way around...GT2/3 also have a manual trans cooler. Have a 6TT Tip here I can throw on the hoist and tutorial if need be...check your thermostat.
If in doubt, manual close or bypass the cooling valve for the trans and watch/log temps
If you are currently in a cool climate, and the highway on ramp is the first high duty cycle for the rads on that trip, you will see a temporary short drop in coolant temps...normal.

The car has never had a issue until a shop replaced the valve, so keeping my fingers crossed that I will find my issue there.

I had a few minutes to take another look at the car again. I manually closed the heater valve last night and that fixed my cooling problem. The car warmed up like normal and remained at operating temp while driving on the highway. The heater valve is new but it looks like it is seeping a very small amount of coolant from where the arm pivots.
When I have some more time I need to check out the changeover valve (996.605.123.01) as it could also be the culprit to my problem.
