Try finding Pirelli Winter Sottozero Serie II or Bridgestone Blizzak LM-32
These should come in sizes that would fit OEM wheels and still be within the rolling diameter tolerance. The Pirelli would be the best fit since the Blizzaks would be stretched a bit more on the wheel.

Would you be better off buying a set of narrower wheels and using them as a set of dedicated winter wheels and tires? Not sure how easy it would be in Switzerland, but in the US it's fairly easy to find an inexpensive set of winter wheels secondhand. I realize this doesn't answer your question but just a thought that you will probably want narrower wheels for winter tires.

so from what I can determine NOBODY makes any Winter tyres 285/35s or 295/35s for 18 inch wheels and the best thing I can do is get some 19 inch wheels where loads of people do ?

It's not a great choice though because the front needs to be 235/40, which is 0.5 inch shorter than rear, which is 1.8% off / 16 revs per mile, which is supposed to be within tolerance level but still not great. I thought long and hard about what to do and I wanted to go with a different setup but then I decided to go with it in the end.

I do have 285/35 18 Dunlop SP Winter Sport 3D on OEM turbo twist wheels.

I only put them on last week and I've done about 100 miles, in 2 degree celsius temperature on dry pavement. Road noise is a little higher than the summer tires that were on the car when I bought it but not overwhelming. Engine and exhaust noise still dominate the overall sound, by a long stretch. Ride is not bad, feels a bit softer than summer tires at same temperatures.
