Buckets make the seat, if you will, much lower...so the wheel size issue decreases.

I really like your wheel Dock...and I really like the DCT carbon ones...they have racing stripes and even can be had with flat bottoms. The latter options might help with the leg bang issue.

I researched the GT3 seats with both the factory and Brey mounts and found that there wasn't much (if any) increase in headroom (i.e. a lower sitting position) between the full down and back position of the OEM seat and the GT3 seat position. Additionally, I really didn't want to have just a driver's GT3 seat and a passenger OEM seat, as my wife tried the GT3 seat and didn't like it all (overall fit and lack of adjustability). She mainly rides so I'd have to have two different seats. I know a Turbo owner in California that did that, but I personally don't like the look.
