What size shims?
I need to increase the front camber from 1.5 to 2.2 - 2.5 deg. neg. The options are 1mm 2mm 4mm or 7 mm shims. Which do I go with for this planned increase?

That might be easier, but would it upset the caster? Experts? As in Dell, Mooty, Rad?

No and the PREFERABLE method is to rotate if you have to choose between one or the other. As far as easier? Shims.
But the best solution is rotate AND shims......which is what we did on my car. Rotate took me to low 2's in the camber department and shims took it the rest of the way to -3.0 but I do not recall what size shim.

For -2.5, rotate the upper mounts and add 3mm shims to get back some caster. You will increase tire clearance with the fenders, so you can run wider fronts with no rubbing.
7mm shims will take you to -2.5 as well, but you will be rubbing the fender liners, and there is no room for wide tires (BTW, 245 is not a wide tire).

Those guys have way more experience than me with it but I thought I'd chime in. I just recently had -2.4 put in with shims (not sure exactly how many). It turns out there is a bit of play in the upper strut mount so between that and carefully titrating the amount of shims, they were able to adjust it so that it barely rubs on full lock. However, I would agree that you couldn't really go any wider with the tires without it becoming a real problem so perhaps the combo is the best way to go. When I had only the struts rotated earlier this year, I also would get occasional rubbing at full lock.
