Performance Springs, extended pan, skid plate?
I recently purchased the H&R spring set for my 1999 996 and plan to install them in a few weeks, while the car is in surgery, up on jacks and generally down and out i was considering installing the extended oil pan kit as I intend on tracking the car some next season. I began wondering if the combination of the pan spacer, the springs etc would be a deadly combo for street driving with pot holes, rocks, entrances to driveways etc?
If so what undercarriage protection would you be considering?

Yes, that can be a problem. Lowering the car and extending the pan + irregular road surface = danger. I have the Porsche pan on mine. It's the only skid plate I could find and it doesn't appear to be very robust, but it's probably better than nothing.
It was about $125 from Suncoast. I'd pay more if there was a really robust one available.

I was considering having a machine shop look at the car and see if they could make a robust unit that would work. I bottomed out already once and almost had a heart attack. My car has the M030 suspension now so I am a little lower than stock. As is..
