I think many would say Moe at Glistening Perfection. http://www.glisteningperfection.com/

I brought my 993 there and my GT3. He's not cheap but I believe many in the LA area think he's the best.

I have a guy that does concours type prep if you really want to get the rubber glove treatment on your car and the white glove showroom refinish...
