I have never driven a 991 without SC so I was under the impression from your post that you were hitting the rev limiter. Only thing I can come up with since you don't have SC and it's limiting you to 5k rpm, it's protecting itself. That's a good thing for the car.
The idea behind SC launch control is consistency. You get consistent launches whether you're dragging the car or on the starting grid. Racing is in the Porsche DNA.
Also with Porsche every option has things you'll never see unless you're part of their design/engineering dept. The software could be doing stuff in the background to help protect other parts of the drive-line from the violent launches. IE active engine mounts, different software tuning for the dual clutch system etc.

Interesting I always thought of LC as something that restricts the revs before brake release not something that let's you do more.
Still, maybe LC adjusts other parameters, like the SPASM stiffness, PDK take up rate, PADM stiffness, etc?

Are you sure yours max'd out at 5k RPM's...and would have held at that level, or is that just where it was after 2 seconds and you lifted your foot off the brake?
