California Highway 198 between I-5 and Highway 101.
Leaving northbound Interstate 5 at Jayne Avenue to meet Highway 198 at the edge of Coalinga or southbound Interstate 5 at Highway 198 at Harris Ranch Restaurant.
It is wonderful 50 mile drive through the coastal hills to meet Highway 101 at San Lucas about 45 miles north of Paso Robles and 10 miles south of King City.
The road has very sparse traffic and the two-lane asphalt pavement is kept in very good condition. In a 5-speed 911 the road is mostly third and fourth gears with little need to brake . . . the occasional straightaways and long section of Priest Valley in the middle are 5th gear.
It is a really fun way to go between Los Angeles to Monterey or the Bay Area, cutting across between Highway 101 and I-5.

Thank you for the amazing ideas everyone! Most of the suggested roads are completely new for me, and beautiful beyond my wildest expectations. I am thinking of editing the original message and creating a list with all suggestions. It might come in handy as a cheat-sheet for someone looking to do similar drives.

Can't believe everyone's saying US-101 in CA and not PCH. It regularly features on lists of top 10 roads to drive in your life. The best bit is between Big Sur & San Simeon. Nepenthe restaurant is overpriced and bland but has the best views.
In the SF area, also, for short trips take CA-84 and Pescadero Road. If you can put up with traffic on a sunny weekend take it to Sam's Chowder House on CA-1 for lunch just north of Half Moon Bay. Also, CA-9 between Saratoga and Big Basin.
These are roads made for convertibles and all tend to get lots of traffic on sunny weekends. And these days lots of annoying bicycles.

Here's another good one, just a little off the beaten path for most. I used to live in Bozeman and drove it several times, unfortunately not in a Porsche, but did once in an Audi. http://beartoothhighway.com/

The Colorado San Juan Skyway.
From my home town, Durango: north on US 550, over the San Juan Mountains through Silverton, Ouray, and Ridgway, and over 3 mountain passes. Then west on 62 and 145 (with a detour to Telluride), over another pass. Finish by cruising 160 back to Durango.
