I would give up PSP -- in fact, I did; paid for an hour's labor to remove the program.
I am ambivalent about the only other option I might consider removing. PDK. I am a clutch lover and this is my first PDK Porsche. It is fantastic. I love it. I don't want to remove it.
But if you said to me, "You have to remove $4000 worth of options from this car, period," I'd probably give up PDK simply because I love manuals so much also. I wanted to experience PDK at least once. If I were ordering a replacement for the GTS tomorrow, I honestly don't know which I would get. To me that's extremely weird; I figured when I ordered PDK on this 911 that it would be either a love or hate relationship and I'd clearly know what I was going to do for the next one. But it's turned out that yes, I love it, but I also love clutched manuals, and there are times I wish I had one of those in the GTS.
Here's a funny one: if I had to remove one big-ticket item, I'd definitely give up PDK before I'd give up full leather. Reason being that the alternative of the one (manual trans) is also equally enjoyable to me, while the alternative to the other (vinyl dash and doors) is not.

If I had to give up one option, it would be the Bose stereo for sure. It basically worthless. I would get the red leather interior now that I have seen a car with it installed. It's beautiful.

The one option I still go back and forth on is the sport design side mirrors. I deleted them and went for the power folding mirrors on my GTS because I have a tight garage and I live in LA where it can be beneficial to have less car exposed when parking on the street. The sport design mirrors look awesome, I must admit, but I went for function over form. I do like the fact that the non-sport design mirrors have a design similar to the 993 and earlier side mirrors. I can always pick out a 996 and 997 generation car just by looking at the side mirrors which are on the window rather than on the door frame. A subtle design change that to me makes a world of difference (I prefer the original and current configuration with the side mirrors on the door frame).

In my cab, the Burmester just doesn't sound all that impressive. Sounds little better than the Bose in my Cayenne. Even sitting in the garage, engine off, I don't find it impressive. I'm not an audiophile, so I can't tell you why. But just lacks presence. I've monkeyed with the settings and not gotten much better. Maybe they are still off?
I should say, I listen at fairly low,volume so that may be a factor.
18-ways...I think they would be a bit more comfortable for me. Nick Murray says they are better padded and I am inclined to agree. I think they look better too. But I think they are thicker, and I need every inch of rear legroom I can get.

I didn't order my car, but the original owner did a pretty nice job of configuring the car. I would have done many things exactly the same way. The two things that were ordered from the factory on my car that I would probably skip are:
- 748 Power folding side mirrors
- XXG Clear Glass Taillights
The things that I would probably add would be:
- XMP Leather Sun Visors
- 498 Rear lid without model designation, only with PORSCHE
- XSC Porsche crest embossed in headrests

Id give up the lighted door sill as well. I could also give up the painted sides and rear of my new build, but given how unique that will look I'm glad I'm doing it

Other than the $800 HD radio option, my car has solely performance options (SPASM/PDCC/PCCB/SC/PSE), none of which I would give up. So, I've got nothing of any value to trade.

Burning Brakes
I ordered a 2017 C2s and got all the handling goodies and the premium package plus and PDK. The only thing I would not order again is the fire extinguisher. I left the interior stock except for the package and that is fine. So would not want to add anything else. Just drop the fire extinguisher.
