Question: does it make sense to buy a Carrera S? In the past, given the two options, why have people gone with the S when the options included on the GTS are less than they would be individually?
Depends. The GTS comes with a few things that I want on my next car - SPASM, SC, SD Mirrors, a few extra ponies and that's about it. It also comes with a bunch of stuff I am not totally in love with such as SD front fascia, altantera interior, black wheels, and CL wheels. I'm pretty neutral on the wider rear end and smoked tail lights. So...... whether or not it is worth it to upgrade to a GTS over an S is up to individuals.
As it looks now, I'd be paying a lot more for mostly stuff I don't really want just to have that GTS badge.

You have to go to the configurator to see how much more the GTS will be and wether it's worth it to you or not.
When I configured the 991.1 GTS it was around 145 and that was about 20 more than my configured S. Also for me, the wide body of the GTS was not a big selling point.

Same here. When I was shopping for my .1, the GTS didn't make sense for me given the interior bits, the wheel options and the wide body. I didn't care for any of the wheel choices and I'm not a fan of the wide body and would only go with it to get AWD. The only thing I liked about the GTS was the front fascia, so it didn't make any sense for me.
