I'd vote titanium, but it's so hard without seeing them on the car. With Sapphire Blue, I think if you go full matte, it might look awkward (flat wheel w/ color that pops), but too shiny might make the car look too blingy. I have to say, I saw a SB Boxster at my dealer with the standard 20" Carrera S wheels in silver and it looked amazing.
I would get either Ti or graphite depends on how the real finish photos. And I would go for a satin finish too, if available. Not too glossy, and not too flat. I think a dark/grey wheels will looks better than a black wheel on our SB especially every GTS has black wheels on. I like how my anthracite plastic dip winter set looks on SB.
I'm leaning towards matte or satin black, and playing it safe, I like the Ti and Graphite but I'm not sure how it will look on the car... and if it will "break"
the "black" theme of the GTS trim scheme...
I would go with the titanium (or the graphite matte). It is similar to the Platinum Satin in the Porsche wheels and I think they look fantastic with a blue car.
I'm actually having the wheels of my Agate Grey Macan (expected delivery this next week) painted Platinum Satin (or close to it).
I'm tired of black wheels. I'm getting it on my GTS, but the color of the car is Jet Black...
I think keeping true to the GTS style is great. Congrats.
In truth I like the Ti and graphite, but I am not sure how it would look, so I will stick with a finish that as you say remains in the style of the car...
I like the Ti......My GTS Targa is just finished being built......Its waiting to be finished in the "exclusive" area of Werks II...... I was able to custom order the TURBO S CL wheels on the car......I thought it looked better than the all black CL wheels, especially on the Carmine Red car.....GOOD LUCK

sounds good - I just could not envisage the Ti on my car so wanted to stay within the lines as it were!
