Where does the 991 GTS get extra power from?

Too much speculation, dyno the car before and after X51 or after it is "broken in"

Just spent some time in a GTS when my S was in for some work. It was PDK with all sorts of options, which made it quite a bit heavier than mine. Did not seem faster but that's completely subjective and unfounded. It had a few thousand miles on it. Fuel cut off for the S is also 7800 btw.

The 911 is about 7 lbs per hp, so it takes about 10 of the X51's extra 30 hp just to compensate for the 75 lbs heavier PDK. Add a bunch more options weight, easily half or more of the GTS's extra power could be eaten up just compensating for all that. As I recall, most of the extra 30 comes just before redline. Most driving though is midrange, where the differences are slight. At some points on the power curve the S is dead even on torque, and that's what counts more than hp anyway. So its not surprising the GTS didn't feel any faster than your S. Depending on options weight and how you were driving it may well have been slower!

Not to worry though. Between the GTS on the door, the Alcantara on the seats, and the cool red thingy on the steering wheel Porsche has made sure it looks faster!

GTS is almost a full second faster from 0-200 km. Porsche doesn't sell pixi dust and charge more for it. Everybody is way over concerned with labels these days. If Porsche sold a power kit for the GTS that incorporated the GT3 motor and sold it as a power kit. People would be in an up raw.
No matter what model you choose they are all Carrera's in the end. Options are options and the only true difference is the two chassis. Wide and short body.
