Sunroof delete is another way of saying that it doesn't have a sunroof. Not sure how that phrase came about but for me it started with 964 as it was part of the GB country pack and so kind of included in the car.

I was a bit apprehensive in ordering it but after getting the car I really like it. It is a factory option and the quality is great. It's not for everyone though as I was blasted by several members of this forum for getting wood in a 911. I do not care if wood or any of my other options affect resale value.

For the newer Porsche owners, the very first 911's made in the mid-1960's had wooden steering wheels, a wood switch panel above the knee bar, and wood shift *****. Wood says "classic sportscar".
"Sunroof delete" has been around since the 1990's. At some point in the mid-1990's PCNA decided to require all Porsches coming to North America to have a sunroof (marketing/profits thing). However, the track types (like myself) did not want a sunroof on our cars (reduced weight, lower Cg, more headroom for the helmet), so PCNA allowed the sunroof to be deleted (usually at zero savings). However, in the very early 2000's PCNA decided to nix the choice of deleting the sunroof (except on GT3 and GT3RS).
The 2012 991 was once again the first time in recent years when a sunroof was an option, though the ordering manual shows it as a "sunroof delete" when not ordered.
...and now back to pictures.
