Default My car is smelled challenged. First it smelled like plastic..

which went away after 1000 miles. Now all of a sudden the car has a musty smell from what seems like the AC? Not an overt mold smell, but a little moist sea water musk odor. I have never owned a single car with smell issues, so I'm a little surprised.

Confirm that your AC drain line is not clogged.

If it was an older car & you lived in a humid area I would have pointed you to cabin air filter being sub-standard after market, but it can't happen on a new porsche with original filter so Look into what Lex suggested.

Sounds like an AC drain issue to me too...go have the dealer check it out

I have a scent of Propane after I brake (like it's building up in the rear, and move forward when breaking).

Make sure you turn the a/c off (but not the fan) for a minute or so before parking.

The least desirable thing is the smell but it does seem to be wearing off after 1600 miles. It smells a bit like burnt gunpowder to me.

I have had this problem in all of my Porsches. All three times, it was the windshield wiper reservoir. The dealer calls these moss tanks, as most Porsche owners will not spray wiper fluid on their car, and the water gets stagnant, and mossy.
Just another easy something to check...
