But why do You want 7" rims ?
The stock spec is 7½" and 8" is even better. The 16" Club Sport rims are 8" ET60 and the car is still somewhat understeering.
I would go for the 17" Cup II 8" ET70 or better yet 9" ET70. You could throw in a spacer of 5 - 10 mm.

I just put Cup 2's on 17 x 7 et 55 and 17 x 9 et 55 with 225/45 front and 255/40 rear. Fit nice, no tramlining. The 7" is a bit narrow for the 225/45 but still within acceptable limits. These rims come on mid 90's 993's.

The original rims on my '89 S4 are 7" front, 8" rear, and I think the corresponding tire width looks and performs well, but 16" tires are getting hard to find in these widths. When I bought the car it had non-stock wheels with ET of around 50 on the front and the steering response was not pleasant, so I replaced them with stock ET65 wheels and the handling is now excellent. So, I'm trying to retain the good steering response in a wheel size that allows a better tire selection.

Chazz, the suspension geometry didn't change between all model years from 87-95.
Thus you can use any of the stock wheels from 928's of any of those years:
Clubsports 16x8 ET60, 16x9 ET60 (89GT, SE, Clubsport)
Design 90's 16x7.5 ET65, 16x9 ET53 (90/91 GT)
Cup I's 17x7.5 ET65, 17x9 ET55 (92/93 GTS)
Cup II's 17x7.5ET65, 17x9 ET55 (94/95 GTS)
Note also that the stock wheels for the '89 GT were 8" wide ET60 fronts - thus ET60 was deemed acceptable by the 928 engineers on an 8" wide front for bump-steer and srub-radius impact.
I agree that there is a large difference between seemingly small offset changes - the ET55 7" Boxster fronts result in a very different ride to ET65 7.5" Cup II fronts when both are running very similar rubber.
