What are your opinions on the 67S?

Are they worth while to restore?
Are the hard to restore mechanically?

Things to watch out for?

Pondering the idea of doing a restoration on one....

madness?

no, not hard; they are old cars and fairly simple mechanically

if you mean restore in the same sense that concours people do then the hard part will be finding a spare stack of $10,000 bills (they feature a pic of Salmon on them, so start your collection now)

A 67S is now worth a LOT of money so any restoration should be commensurate with a $250K car.

IMHO, this is not a DIY project unless retained value is unimportant.

It would be a shop build.
Metal and paint all done professionally.
Send motor and tranny out to proper builder.

Thinking about it....
