There are a lot out there that are good probably closer to you but there's a great one in east coast of Florida called 356 Unlimited, super cool shop and great guys!

Best place to look is 356 Registry.
Maybe we can find a shop that will give us a discount for doing two 1960 T5's at the same time!

A lot depends -of course- on what you're trying to achieve with this restoration. If perfection is what you're looking for you should consider Europa Macchina in Lewisberry, Pa. No affiliation, etc. etc. but I have been a happy customer of theirs for years now.

Twofer sounds good! My 356 is a solid car in nice condition. Repainted once but in good condition. Newly rebuilt SC engine. I'd like to bring it back to original color, and make it more of a driver's car without going full outlaw….

But once its on a transporter, it doesn't really matter how far it's going.

There was a expert 356 restoration person located in Colorado. I believe his name was Jim Kellog and he's around the Denver area. He also has written restoration books for Porsche's. I would check with the Alpine Mountain Region PCA club. As someone also suggested, ask the question at 356registry.

Dave Imes at Apex Autobody can do any paint and chassis the car needs. And Carquip can do the engine and gearbox for you. Tom did Mel Shapiro's Speedster, but is pretty much out of the game at this point when it comes to a full restoration.
